Would I be accepted to UC Berkeley, UC Santa Cruz, Irvine, Davis, or University of the Pacific?

Well your SAT score is extremely low creating a huge risk of getting in. If they decide to let that go your GPA is just average to their ratings. Your extracurruicular activiteis might help a little but you should have some volunteer community service hours. Take the SAT again and do more volunteer stuff and build up hours.
